BBQ SAUCE - 1 cup of All gold tomato sauce - 2 table spoons brown sugar - 1 Tsp garlic powder - 1 Tsp cayenne pepper - 1 Tsp grounded black pepper + 1Tsp salt - 2 Tbsp of lemon juice - 1 Tbsp cider vinegar - 2 Tbsp Worcestershire sauce Preparation In a small pan put tomato sauce, brown sugar, Worcestershire sauce, cider vinegar, cayenne pepper, garlic powder, lemon Juice, and salt and pepper and let it simmer on medium heat for 5 minutes. Remove from stove and allow it to cool a bit and brush sauce over your meat. - METHOD (TBONE) - In a non stick frying pan add 2 table spoons of cooking oil - Place your TBONE on a board and season with salt and pepper both sides - Once pan is heated, place your tbone one by one and let it fry for 5 minutes on each side, place it on a board and brush BBQ sauce on both sides and let it rest until ready to serve STEAMED BREAD RECIPE: Available on website https://cherylsfoodexperience.webs.com/apps/photos/photo?photoID=195749108 195749108 Chicken liver on a bed of Steamed bread.. Ingredients - Chicken livers (250g) - 3 large red-ripped tomatoes ( chopped) - 1 large onion ( chopped) - French chives for garnish - Cooking oil - Table spoon of garlic and ginger paste - 1tsp curry powder - 1Tsp chicken spice - 1Tsp paprika - Salt and pepper to taste - 1 Tsp of tomato paste METHOD - In a micro wave suitable container, placed your clean chicken livers and microwave for a minute (90sec)until the access water and blood is out and its half cooked. - In a non stick pan add 3 table spoons of chosen cooking oil, once heated add onions, garlic and ginger paste and add tomato paste. Stir the mix on high heat for about 15sec and add your tomatoes. Add all your spices and close your pot for another 15 seconds, add your chicken livers (dont add water from livers, just dry livers) and turn down stove to medium heat and let it cook for about 2 minutes. Stir everything together and allow the livers to soak in the spice for another 30 seconds. - Add salt and pepper to taste and put aside once cooked to your liking. ( rare/medium or well done). Once done let it rest on a board aside. Brush your meat with your favorite BBQ sauce for that extra zing. METHOD - DOMBOLO ( FETA AND SPINACH) Ingredients - 5 cups of self raising flour - Half a sachet of instant yeast - 1Tsp of salt - 3 table spoons of white sugar - 1 TBSP of aromat - Hand full of feta ( crushed in to small pieces, u can use plain of flavored) - Handful of chopped spinach - 1l warm water - 2 Tablespoons of cooking oil ( the oil will keep it moist) METHOD - Mix all dry ingredients together, add feta, oil and spinach and start adding small quantities of water until you get a great consistency with your dough. It should not be too dry or too wet. The dough should not stick to your hand. - Cover your dough and place it in a warm area so it can rise double its size. - Once risen, gentle push it down side to side until you have 1 round nicely mixed dough. - In a large pot, add 1L boiling water and make sure your stove in on high heat. In a deep metal bowl, rub butter or oil in the inside and put your dough. Place it in the pot with boiling water. Make sure the water is just below the metal bowl. Cover the pot and let the dough steam for an hour on high heat. - Once steamed, remove from pot and allow to cool down . - Cut into desired thick slices and toast on a flat toaster ( you can butter both sides if desired) SERVING - On a serving plate, place your toasted Dombolo, butter it with your choice of mayonnaise.
